Ingredients
- 8 large eggs
- 3/4 cup KNUDSEN Cottage Cheese
- 1 green onion, sliced thin
- 1/2 cup shredded cheddar cheese
- 1/8 tsp. black pepper
Directions
- Heat oven to 325°F.
- Blend eggs and cottage cheese in a blender or food processor until smooth; stir in remaining ingredients.
- Pour into 12 muffin pan cups sprayed with cooking spray.
- Place filled muffin tray in larger shallow pan. Add enough water to larger pan to come halfway up sides of muffin tray.
- Bake 25 to 30 min. or until knife inserted in centers comes out clean.
- Your favorite mix-ins such as crumbled cooked bacon, bell peppers or diced tomatoes.
