Ingredients
- 1 cup KNUDSEN Sour Cream
- 4 oz cream cheese, softened
- 1-1/2 cups cooked shredded chicken
- 2 cans (15 oz. each) whole kernel corn, drained
- 1 jalapeño, diced and seeds removed
- 3/4 cup shredded mozzarella
- 3/4 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- 1/4 tsp. garlic powder
- 1/4 tsp. cayenne pepper
Directions
- Heat oven to 375°F.
- Stir together sour cream and cream cheese in a 2.5-qt casserole dish sprayed with cooking spray. Add chicken, corn and jalapeños.
- Combine cheeses, reserving ½ cup for later use. Stir remaining cheese into corn mixture.
- Top with reserved cheese. Bake 25 to 30 min. or until golden brown.
- Serve with fresh vegetables, toasted bread or tortilla chips for dipping.
- Garnish with fresh chopped cilantro, sliced jalapeño and lime wedges.
