Ingredients

  • 1 cup KNUDSEN Cottage Cheese
  • 1/2 cup cooked shredded chicken
  • 1/4 cup Mexican style finely shredded cheese
  • 1/4 cup cooked rice
  • 1/2 tsp. taco seasoning
  • 1/4 cup chopped red onion
  • 1/4 cup chopped tomato
  • 1 green onion, sliced

Directions

  • Place cottage cheese in a microwave safe bowl; stir in chicken, shredded cheese, rice and taco seasoning.
  • Microwave, covered, on HIGH 45 sec.; stir.
  • Top with green onions, red onion and tomato.
Serving Suggestion:
  • Serve with warm tortillas or tortilla chips.
Tip:
  • For smoother texture, add additional time until melted together.
